Healthy Inspiration: Peanut Buttery Cookies

Oh how I love peanut butter cookies! We make our own peanut butter and they are sooo yummy! You can use any store bought peanut butter as well. When buying peanut butter you want as few ingredients as possible, peanuts and salt is best. Avoid all peanut butters with hydrogenated oils, they are not good for our bodies!

Peanut Buttery Cookies

Ingredients: Dry Bowl 2 cups quick cooking oats 1 1/3 cups of white wheat flour 2 tsp baking powder 1/2 tsp salt Wet Bowl 2/3 cup sugar (raw is best) 1/2 cup natural peanut butter 1/2 cup milk 1/3 cup oil 1/4 cup sugar 4 tsp ground flax seeds 1 1/2 tsp vanilla Extras 1/4-1/2 cup natural peanut butter Directions Preheat oven to 350. Spray large cookie sheet. Mix dry bowl together. Whisk wet bowl together. Combine wet and dry bowls. When well mixed start to add by the teaspoonfuls the extra peanut butter (may need to mix with your hands) you will have swirls of peanut butter in the dough. Scoop by tablespoons full of dough and form balls, press ball slightly onto prepared sheets about 2 inches apart. Bake for 11-12 min. Cool 5 min, transfer to cooling rack and cool completely. Healthy Inspiration: Green Lemonade Smoothie

Has the time of year finally come for lemonade??? Not sure after the chilly Mothers Day we had in W Michigan yesterday… But we will be prepared with this HEALTHY recipe when the time does come. I have a really nice blender (Vitamix) after 14 years of using cheap ones. It whips this up in no time but you may need to run yours a bit longer to get it well mixed.

Green Lemonade Smoothie

Ingredients

2-3 cups green grapes
1/2 lemon (peeled)
Lightly cover lemon with agave or honey
2 handfuls of spinach
2 cups ice

Directions

Put all in the blender in this order. Mix and serve. * Add a small amount of water if needed to blender.

Healthy Inspiration: Oatmeal Pecan Bread

Are you a bread maker? I don’t mean frozen dough… I don’t even mean throwing it in a bread machine (although that is just as nice). This will be a handmade bread that feels so satisfying afterwards! Making your own bread is soooo much healthier than store bought bread, you get to decide on the ingredients you want in each slice.

Oatmeal Pecan Bread

Ingredients

1/4 c warm water (baby bath temp)
2 T. active dry yeast
2 1/2 c. hot water
1/2 c. Honey or brown sugar
1 T salt
1/4 c olive oil
1 c quick oats
1 c pecan pieces
4 c whole wheat flour
2-3 c unbleached white flour

Directions

Dissolve yeast in 1/4 c warm water in small bowl. In a separate bowl combine hot water, sugar, salt, and oil. Stir in the quick oats, pecan pieces, and whole wheat flour. Add in yeast. Add in the remaining flour GRADUALLY to make a moderately stiff dough. Turn out on a lightly floured surface. Knead until smooth and satiny. Shape into a ball and place in a greased bowl. Cover and let rise in a warm place until double (about 90 min). Punch down dough and cut into 2 portions (can do 3 for small loafs). Make smooth balls and shape into loafs. Let dough rise in oiled pans until double (about 60 min). Bake in a PREHEATED oven at 350 for 30-35 min. Place on cooling racks till cool. Enjoy!

Healthy Inspiration: Dhal (Indian Lentils)

Do any of you love Indian food? I have a friend that is a huge fan. She has been to several restaurants, made her own dhal and never had a recipe this good!! :) Worth a try for all us rookies that are not so sure about dhal. Dhal is a little taste straight from India (Indian lentils). Remember about lentils and how good they are for you!

Dhal (Indian Lentils)

Ingredients

2 TBS oil
1/2 med onion chopped
2 tsp garlic paste
2 tsp fresh grated ginger root or ginger paste
1 can 6 oz tomato paste
2 tsp mild curry paste
1 tsp coriander
1 tsp cumin
4 cups water
1 can 14oz lite coconut milk
1 cup dried lentils
1/2 tsp salt

Directions

Heat oil on med heat in large sauce pan, cook onion till soft, stirring. Add garlic and ginger, cook 1 min. Add tomato paste, curry, coriander and cumin, cook for 3 min stirring constantly to avoid burning. Add in water, milk and lentils, stir to mix well. Bring to a boil over high heat, reduce to simmer and cook partially covered. Add any water as needed, season with salt and serve over rice. Yum!

Healthy Inspirations: Sugar Cookies w/ Agave

Sugar Cookies w/ Agave

I have been loving homemade cookies lately! Try these cookies with Agave instead of sugar!

Ingredients

1 1/2 cups agave nectar
3 cups organic white flour
1/2 cup organic butter (1 stick)
2 TBS ground flax seed
6 TBS water
1 tsp. vanilla extract
1/4 tsp. salt
1 tsp. baking soda
1 tsp. baking powder (aluminum-free)
1 1/2 cups chocolate chips

Instructions

Preheat the oven to 375 degrees Fahrenheit. Place flax and water in a small pot and wisk on high for 1 min, let cool. In a large mixing bowl, combine butter with agave and mix well. Add in flax mixture and add in the vanilla. Mix well.

Add the baking soda, baking powder and salt. Mix well. Add the flour, one cup at a time, and mix well. Stir in the chocolate chips until combined.

Place cookies on a cookie sheet by the spoonful. Separate them about 2 inches apart in all directions. Bake until golden, about 10 to 12 minutes.

This will make yummy cake like cookies!
